Pineapple Rice An Easy Side-Dish

PINEAPPLE RICE IS AN EASY SWEET AND SAVOURY SIDE-DISH

I re-created this amazing vegetarian pineapple rice recipe years ago for my family since we all love both rice and pineapple.

Years later and I’m still making rice and pineapple as a side-dish at leat once a week because it tastes So Good.

We all look for quick easy dinners for our families, or for side-dishes to go with a main course and this was something different.

I always enjoy creating new side-dishes for my family to keep meal planning easy and to add variation to our diet.

Irronically, both of my boys would prefer regular rice over potatoes most days unless we are having french fries or mashed potatoes with gravy.

Either way, you look at it, my boys like to eat and pineapple rice is one of their favourites.

Rice And Pineapple Marry

I found this pineapple rice recipe way back when my kids were small in a grocery store flyer although I don’t recall who to give credit to.

We typically serve grilled Oktoberfest sausages with our pineapple rice as that seems to be what goes best with this recipe.

I’ve made it so often and announced it on the “What’s For Dinner?” thread on the Canadian Budget Binder Facebook page that some of the fans wanted the recipe.

Mr.CBB asked me if I could take some photos and share this easy rice recipe on his blog, so I agreed.

Rice is an inexpensive side dish for many meals and this is quick and easy to prepare for those nights you are in a rush to get something nutritious on the table.

Types Of Rice For Pineapple Rice

You could use just about any kind of rice for this dish such as jasmine, basmati or even make a pineapple brown rice.

You will likely have to adjust the amount of liquid you use depending on what kind of rice you use as some kinds might use more than others.

Brown rice would need more liquid although I’m not sure about some of the others.

Simply follow the instructions to make rice so it comes out perfect and fluffy.

For this rice recipe, you will want to have 3 cups of cooked rice so adjust your amounts accordingly.

I cook my rice in an old Corning-ware dish on the stove as I don’t have a rice cooker.

A rice cooker if you have one is a convenient way to make rice because you set it and forget it so it’s perfect for those who are multi-tasking in the kitchen.

How To Make Pineapple Rice

For this recipe you can use fresh pineapple that is in season of turn to a canned pineapple in chunks.

Both work equally as well.

This recipe calls for green pepper but I have used red, yellow or orange peppers in it as well.

Whatever you have in the way of a sweet pepper will work.

I’ve picked up the red and yellow peppers from the reduced rack a time or two and the red especially looks very nice as it’s so vibrant in colour.

This pineapple recipe makes a fair amount but with the two boys still at home, I don’t usually have leftovers.

It does re-heat in the microwave nicely or I have used it as part of the recipe for fried rice to clean up the leftovers.

If you love the sweet taste of pineapple and you enjoy rice these two ingredients come together well in this pineapple rice dish.
Ingredients
  • 1 can pineapple tidbits or chunks, drained and save the juice
  • water to cook the rice, added to the drained juice to make up your amount
  • 1-1/2 cups uncooked rice, or what ever will give you 3 cups cooked
  • 1/3 cup brown sugar
  • 2 tsp prepared mustard
  • 2 tbsp soya sauce
  • 1/3 cup chopped green pepper
Instructions
  1. Bring your cooking liquid to a boil, reduce heat and add the rice stirring well.
  2. Once the rice is just cooked, add the brown sugar, mustard, soya sauce, pineapple, and peppers.
  3. Mix well and let sit for a couple of minutes to absorb any leftover liquid from the pineapple and serve.
  4. I usually let the rice sit while the sausage finish cooking and I set the table.
  5. As you are not really cooking the peppers they add a nice crunch to the dish!!
  6. I usually freeze the extra chopped peppers for the next time. They don’t have to be completely thawed going into the pot, that way they still crunch some.
